# Method steps:
01 - Heat 1 tablespoon butter in a large skillet over medium-high heat. Add beef strips and sear until browned on all sides, about 2 minutes. Transfer beef to a plate and set aside.
02 - Add remaining butter to the skillet. Sauté onion and garlic until softened, about 2 minutes. Add mushrooms and cook until tender and golden, 5 minutes.
03 - Sprinkle flour over mushrooms and stir to coat. Pour in beef broth, then simmer while stirring until sauce thickens, approximately 4 minutes.
04 - Lower heat to medium. Return beef and any juices to skillet and mix in mustard and sour cream. Simmer gently until beef is just cooked through, 2 minutes. Season with salt and pepper.
